Chocolate Superfood Pudding

We all want to get more ‘superfoods’ into our diet, but gulping down a glass full of chia seeds isn’t the most appetizing way to get your fill. This Superfood Pudding is a delicious way to get lots of goodies into your diet, and best of all, its chocolate!

The Recipe

  • ¼ cup of Chia Seeds

  • ¼ cup of Goji Berries

  • 1 Tablespoon Cacao Powder

  • 1 cup Almond Milk (I use Vanilla Almond Milk in this recipe, but you can also use Hemp Milk, Coconut Milk, or Rice Milk. If you use unsweetened milk, pure maple syrup is a great natural sweetener)

Mix all the ingredients together in a bowl, and let it sit in the fridge for at least 30 minutes. The goji berries and chia seeds will absorb most of the liquid and become full of flavor, leaving you with a delicious, healthy, chocolate pudding!

Why is this pudding so good for you?

Chia Seeds: Chia seeds have three times the amount of calcium than a glass of milk, more Omega 3 fatty acids than salmon, are low in saturated fat, and contain no cholesterol! Chia seeds also deliver 42% of your recommended daily value of fiber in a single serving, which is key for aiding digestion and promoting weight loss. Chia also absorbs up to twelve times its own weight and expands to curb your appetite, which reduces caloric intake.

Goji Berries: Goji berries have compounds rich in Vitamin A that may have anti-aging benefits, help boost immune function, protect vision, and even help prevent heart disease. Some studies suggest that goji berries may boost brain health by promoting calmness, happiness, better quality of sleep, and feelings of good health.

Cacao Powder: Chocolate is not just a guilty pleasure! Its bad reputation as a junk food should be more accurately attributed to the harmful effects of commercial processing and refining techniques, and the other ingredients commonly added, such as white sugar. Cacao in its unprocessed state is rich in nutrients, and has an enormous 10% antioxidant concentration level, which is ten times as high as blueberries!

Almond Milk: A serving of almonds provides an excellent source of vitamin E, and a good source of protein and fiber. (Higher than any other tree nut!) Plus, they’re naturally low in saturated fat and cholesterol-free. Almond milk contains no lactose, making it easy to digest and the perfect alternative for those suffering from lactose intolerance. Try to buy unsweetened, because even though this milk is amazing for you, certain brands will add a lot of sugar. You can even make your own almond milk!
